Third Eyelid
Dogs have an additional membrane in the inner corner of their eyes (nictitating membrane), often called the "third eyelid." According to the "Dog Owner's Home Veterinary Handbook," this membrane may extend to cover the dog's entire eyeball, looking as though the eye has rolled back in its socket. This is your dog's way of protecting his eye from further damage, and it occurs frequently if his eye is irritated or injured. It also might be conjectivitis (pink eye)

It could be a seizure. During this there mouth will move as if there chattering and maybe move there tongue and when they open there eyes it looks like they've rolled to the back of their head and later on they will go back to normal but you should go see a vet immediately. My dog did this also

Yes it sounds like a stroke to me! You should take her to the vet to get some meds to treat strokes! Hope this helps! Good luck!
