A mallard is a specific breed of duck.

It's the same difference between a Dog and a Husky; the Husky is a breed of dog.
The Mallard is actually a cross breed between a Peking duck (recognized for the quality of its liver) and a Muscovy (or Barbary) duck (recognized for the quality of it's flesh/meat).
