This is completely normal. Guinea pigs tend to have a funny five minutes just like dogs and cats do when they are excited, it indicates that your pet feels safe in its home but when you try to take it out it will act timid until it gets used to you. This behavior is more ofter found in males!
As for the chewing on the bars of its cage you can buy sprays in pet shops that you apply to the cage and it prevents the pigs from chewing on it

She may be sick but I don't think so. Take your guinea pig out a lot and always be calm and never make loud noises. Your piggie might just be scared. Is there something in the room she is in scaring her? Is the temperature in the room okay? Dose your piggie have food and water? Do you have a cat or dog. If so, don't let your cat or dog near your piggie. My pigs always get very scared and timid when the dog walks in. Also you must never get angry or annoyed with your pig it will just scare them more. Make sure she has fresh greens and veggies everyday. There might be a draft in the room to. Piggies hate drafts and humidity. If none of this helps, take her to the vet. Something might be seriously wrong.
