Lurchers by their habit take delight in chasing small animals such as rabbits, Squirrels, and even sometimes fox. They are great sprinters and they need to exercises and stretch their legs every so often. They do not have a killer instinct and may ot end up in killing the animal they chase but just do this for the fun of it. As a owner you have to know that running is one of their basic needs so it will be a good idea to give them appropriate toys to play with such that they can spend some of their energy running around playing with their toys. Also for your lurcher to learn proper behavior, let it interact with dogs of other breeds such that it picks up positive traits from these other dogs.
Try to teach it the importance of a 'Stop' command then it gets too excited or becomes rough. You can probably reward it with goodies once it obeys your command. This will be a positive incentive for the dog to adhere to such training.

Hi, I have a Lurcher who is 1 year's old. She came to me as a rescue animal a few months ago. I already have 3 cats and a Border Collie. After about a week she started chasing the cats, especially the 3 legged one. I have managed to stop her permanently by spraying her with a vinegar/water mix each time she made to go chase. It's worked a charm and now I use that as a deterent for any bad behaviour from her and it's like magic. Try it.
