Lipizzans jump out at me right off the bat. Lipizzans (horses) are born black and grow up to be white. Frogs and toads is another. They are born (or hatched) as tadpoles, then grow legs and lose their tails. Butterflies ...and many other insects, come to think of it. They spend their youth as larvae (caterpillars, in the case of butterflies) then become the creature their parents were/are later in life.

Butterfly and caterpillar. I think this is a swallowtail (but, butterflies isn't my forté, so I'm not certain).
