How do you judge a puppy's temperament when choosing from ( omg, they are all so cute ) a litter of pups?

They are cute.  :). First learn about the breeds and their energy levels.  There are specific handling tests.  This site describes them well.

Your training is just as important as the pup's disposition, if not more.  Remember, you're raising a dog - not a puppy.  Do you want a huge St. Bernard jumping on visitors?  It's cute when he's tiny, but ... 

Discipline is not mean.  It's teaching.  It's a gift of love.

Calm, and interested in their environment. If they are jumping all over you and of high energy then it may well lead to a high energy adult.

You could ask the breeder which one is the least energetic  (in the litter) or which one is the quietist ( in the litter)
