If he hasn't moved in a week, try picking it up, if he doesn't move his legs at least, my guess would be that he has died.
My hermit crab hasn't moved in a week. It is slightly out of its shell, doesn't smell, hasn't changed in color, and hasn't eaten. Is it molting or dead?
